Vanessa Darling, a former French immersion teacher, world traveler, stay at home mom of three young children and now, the Co-founder of The Maple Tree Gluten-Free Bakery and Cafe; believes that food should bring people together and that everyone should have the privilege of a tasty treat.
Seven years ago, Vanessa who has always been passionate about food, learned that she was gluten intolerant. Not wanting to compromise her love for food and drawing inspiration from her mother’s classic recipes, such as banana chocolate muffins, her sister; owner of La Oliva, a gluten-free catering company in Edmonton and from the diverse cuisine she encountered while traveling, she began researching and developing healthy, gluten free alternatives to the food she and her family had always enjoyed. Fast forward to today, Vanessa has over 50 healthy, gluten-free recipes ranging from donuts to pizza crust she is excited to share with you!
Focused on helping those with dietary restrictions not feel as though they have to compromise at meal time; many of her recipes are not only gluten-free but also vegan, nut free, dairy free, egg free, and soy free. Baking with unrefined sugars, such as coconut sugar, maple syrup and honey and using healthy fats such as coconut oil, butter and olive oil, Vanessa is always working on new, great tasting, healthy, gluten-free recipes for you to try out.
